You can watch the youtube video or just follow the recipe. NOT mine, just one I ran across tonight.
3 Cups of Good Bread Flour 1/4 tsp Bread Machine Yeast (30 minute warmup if in fridge) 1 tsp Salt (to Taste adjust as needed)
combine dry ingredients with wooden spoon
12/13 oz of water
combine water with handle and then bowl of spoon flip dough by hand to gather dry ingredients in bottom of mixing bowl
cover bowl for 8-12 hours and allow to rise
flour work area and use spatula to remove dough from bowl
flour hands. stretch dough just enough to fold. turn 90 degrees and fold again. turn 90 degrees and fold again. turn 90 degrees and fold again.
tuck edges under to make a ball
use non-stick skillet. spray with PAM. place dough ball in skillet. cover with lint-free towel for 1 hour
preheat oven to 450
preheat baking vessel (~2.5qt corning ware with lid) 30 minutes
flop dough out of skillet into baking vessel
use knife or scissors to score top
bake covered 30 min at 450
