6-8 Peeled hard boiled eggs
500g(1lb) ground meat (originally ground pork was called for) I have used ground beef and ground turkey
Spice meat as you like (I use lots of garlic and Worcestershire to start then other spices as the mood takes me.)
Flatten small ball of meat mixture between two pieces of saran till it is 1cm (1/8 in.) thick. Wrap hard boiled egg with meat mixture.
Here I use one of two variations- a)Deep fry meat wrapped egg till done. b)Dip meat/egg in beaten egg then roll in bread crumbs spiced as you like, I like sesame seed in fine bread crumbs. Bake in 350 oven for 20-25 minutes longer if you use a thicker meat wrap.
We eat these either hot for our evening meal or next day out of fridge. This is a good cook ahead breakfast if you have overnight company.
