½ lb hamburger, browned and drained ¾ cup each: chopped onion, diced celery, shredded carrots 1 tsp basil 1 tblsp parsley 4 tblsp butter, divided 3 cups chicken broth 4 cups cubed potatoes ¼ cup flour 8 oz velveeta, cubed 1 ½ cups milk Saute onion, celery, and carrots in 1 tblsp butter until soft. Add hamburger, basil, parsley, broth, and potatoes. Cook about 10 minutes or until potatoes are soft. In another pan, melt remaining butter, stir in flour to make paste. Add paste, in little bits, to soup and stir well. Add velveeta; stir until melted. Add milk, season with salt and pepper to taste. Warm thru and serve. Makes a bunch, freezes well.
