Making my third batch of the year tonight... All my family members love this.
6 quarts of ground cucumber (I use zucchini - a lot!) 1 quart of ground onion 4 bell peppers, ground 2/3 cup canning salt 6 cups sugar 3 cups vinegar 1 tsp. celery seed 1 tsp. tumeric 1 tsp. mustard seed
Mix vegetables with salt. cover with water and ice and let set at least 3 hours or up to 24 hours. Drain veggies (I use an old pillowcase) and squeeze out as much liquid as possible.
In a large pot, bring remaining ingredients to a boil. Add veggies and boil for 3 minutes. Place in hot jars, seal, and waterbath for 10 minutes. I made at least 30 pints of this last year and ran out! This recipe makes 6-8 pints, depending on how much water is in the veggies.
